The Nature Conservancy's Matheson Wetlands Preserve on Kane Creek Blvd in Moab is a totally different experience from the national parks. Instead of red rock desert, it's a lush, green wetland ecosystem that's home to birds, frogs, and other wildlife.
The main trail is a boardwalk that winds through the wetland. It's flat, easy, and manageable for young kids. The boardwalk keeps you above the marshy ground and gives good vantage points for wildlife spotting.
